Introducing Jordan Bailey – a Cornwall-born chef with an insatiable appetite for success. From humble beginnings at a family-run restaurant, Rosewarne Manor in Cornwall, Jordan’s passion for culinary excellence saw him rise through the ranks to compete in the world’s most prestigious competitions – including the coveted Bocuse d’Or, whilst at the Michelin starred Elephant Restaurant in Devon.
His quest for perfection led him to the 2-Michelin star Restaurant Sat Bains, where he had access to the world’s best ingredients, honing his skills and understanding what it takes to be truly successful. But Jordan was hungry for more – he yearned to take his talent overseas. And so, he found himself in the Norwegian capital of Oslo, working in the renowned Maaemo restaurant under chef Esben Holmboe Bang. Within a year, Jordan had earned the coveted title of Head Chef, leading his team to perform at the highest level.
Jordan’s hard work and dedication paid off – Maaemo was awarded the ultimate accolade of 3-Michelin stars, cementing Jordan’s position as working in one of the world’s finest restaurants. After maintaining and holding these stars for 2 years, Jordan was ready to lead his own restaurant together with his wife, Majken – both driven by a genuine idea of their own joint creation.
Bringing a concentrated level of experience from both working at a very high level in Scandinavia, a part of the world that cherishes the hyper-seasonal and values the local larder, they created the ground-breaking restaurant AIMSIR.
Just over four short months after opening, AIMSIR was awarded not one, but two Michelin stars, the fastest ever straight to two-star for any restaurant in the history of the Michelin Guide Great Britain and Ireland. The recognition from the start was overwhelming, with the food, service, and wine, were all awarded multiple national awards year after year and rating highly on an international level.
Majken
Introducing Majken Bech-Bailey – a proud Dane, who didn’t start her career in the world of haute cuisine. Instead, she was serving coffee in a high-intensity café in her hometown of Nakskov, waiting to hear if she’d be accepted into Copenhagen Business School. But fate had other plans.
A friend asked her to lend a hand at Henne Kirkeby Kro, a restaurant she soon discovered was a 2-Michelin star establishment. Majken thrived in this high-pressure environment, discovering a passion for impeccable service that became an addiction. She turned down her spot at the prestigious Business School to pursue her newfound love.
Majken moved to Oslo with her husband Jordan, working in a series of renowned restaurants like Bon Lio, ORO, and the 3-Michelin starred Maaemo. She even helped open a high-end restaurant, retail shop, and hotel. Her dedication paid off when she and Jordan opened their own hyper-seasonal and local restaurant, AIMSIR.
Majken’s exquisite attention to detail and unparalleled service made AIMSIR an instant hit, earning two Michelin stars faster than any other restaurant in the Michelin Guide Great Britain and Ireland’s history. Majken’s talents didn’t go unnoticed by the CLIFF group, who promoted her to Director of Quality and Design while she continued to serve as AIMSIR’s General Manager.
With her creative mind, positive attitude, and exceptional people skills, Majken went on to redesign the hotel rooms, restaurant, bar, spa complex, food pantry, and expand their retail offerings.
